The feral, fragrant character of thyme contrasts beautifullywith heavy, complex olive, sombre as a Greek church bell at noon.Coriander Leaf and Peanut: Substitute coriander and peanut for basil and pine nuts and you have a delicious Vietnamese-style take on pesto.
